Udon Noodles with Almonds and Miso
- 1 package of Sobaya Udon noodles (230 g)
- 3 tbsps Massawippi Townships style miso
- 2 apples peeled and grated
- 1 tsp turmeric mixed with 3 tbsps almond butter
- Ground black pepper to taste
- 6 tbsps of the noodle cooking water
- 1 cup broccoli pre-cooked and minced
- Boil the noodles.
- In a bowl, mix the rest of the ingredients, add the cooking water and mix well.
- Add the noodles and mix.
- Serve. Garnish with broccoli.
