Udon Noodles with Almonds and Miso

Ingredients

  • 1 package of Sobaya Udon noodles (230 g)
  • 3 tbsps Massawippi Townships style miso
  • 2 apples peeled and grated
  • 1 tsp turmeric mixed with 3 tbsps almond butter
  • Ground black pepper to taste
  • 6 tbsps of the noodle cooking water
  • 1 cup broccoli pre-cooked and minced

 

Preparation

  1. Boil the noodles.
  2. In a bowl, mix the rest of the ingredients, add the cooking water and mix well.
  3. Add the noodles and mix.
  4. Serve. Garnish with broccoli.
