Oriental Style Omelet with miso

Ingredients

  • ½ brick (227 g) of silken tofu
  • 3 tbsp Massawippi soya and rice miso
  • 4 eggs
  • 3 tbsp flour
  • 1 tsp paprika
  • Black pepper to taste
  • 1 carrot grated
  • ½ cup squash or zucchini grated
  • 3 tbsp green onion finely chopped

 

Preparation

  1. Puree the fist 6 ingredients in a food processor.
  2. Add to the vegetables in a mixing bowl and mix with a spoon.
  3. In a slightly oiled frying pan, pre-heated at low temperature, cook 15 minutes under cover.
