Allroots Townships Miso Salad

Ingredients

Salad

  • ½ red onion thinly sliced
  • 1 medium size carrot finely grated
  • 1 medium size parsnip finely grated
  • 3 radishes finely grated
  • ¼ – 1/3 celeriac finely grated
  • 1 fresh beet finely gratede

Vinaigrette

  • 2 tbsp Massawippi Townships style miso
  • 4 tbsp white wine
  • 2 tsp organic Orphée Dijon mustard
  • 2 garlic cloves crushed
  • 1 tbsp organic Orphée olive oil
  • 3 tbsp plain yogurt

 

Preparation

  1. Mix the salad ingredients together in a salad bowl.
  2. Combine the miso, wine, mustard and garlic. Pour the oil in a steady stream while mixing.
  3. Add the yogurt and mix.
