Our organic non-pasteurized soybean and buckwheat miso is a gluten-free, multi-purpose condiment, surprisingly mild in taste, full bodied and slightly salty. It has undergone a natural, uninterrupted fermentation process of at least 3 years. It contains only certified non-GMO organic ingredients:
- Whole organic soybeans high in protein content. We prefer to use locally or regionally produced soybeans from the Eastern Townships, central
- Quebec or the Mauricie region.
- Whole grain buckwheat.
- Sea salt.
- Natural spring water.
- The grain is inoculated with Aspergillus oryzae and lactic bacteria such as Pediococcus halophilus and Lactobacillus delbruekii.
