Allroots Townships Miso Salad

4 – 6 servings

½ red onion thinly sliced 
1 medium size carrot finely grated
1 medium size parsnip finely grated
3 radishes finely grated
¼ - 1/3 celeriac finely grated
1 fresh beet finely grated
Mix the ingredients together in a salad bowl. Serve with Dijon mustard vinaigrette:

2 tbsp Massawippi Townships style miso
4 tbsp white wine
2 tsp organic Orphée Dijon mustard
2 garlic cloves crushed
1 tbsp organic Orphée olive oil
3 tbsp plain yogurt

Combine the miso, wine, mustard and garlic. Pour the oil in a steady stream while mixing. Add the yogurt and mix.
