Barley and Vegetable Miso Soup
6 servings
6 cups of water (1.5 l)
½ cup hulled barley
1 stalk celery diced
1 carrot grated
½ cup turnip grated
1 tsp turmeric (optional)
coarse ground black pepper to taste (optional)
3 ½ tbsps Massawippi Townships miso diluted in the water
Bring the water to the boil, add the barley and let simmer until cooked (about 15
minutes). Add the vegetables and spices. Let simmer 5 minutes. Remove from heat. Add
the Townships Style Miso just before serving.
