Our soybean and barley miso has a full-bodied, rich taste. It has undergone a natural, uninterrupted fermentation process of 3 or more years. We select our ingredients with the utmost care and take pride in using only the highest quality organic products, certified non-GM.
• Whole organic soybeans high in protein content. We prefer to use locally or regionally produced soybeans from the Eastern Townships, central Quebec or the Mauricie region.
• Organic pearl barley, semi polished, grown in Quebec.
• Sea salt.
• Natural spring water.
• An inoculum of Aspergillus oryzae and a selection of lactic bacteria such as Pediococcus halophilus and Lactobacillus delbruekii.
